I was working on a project, and when I closed Steam VR, aximmetry automatically closed and deleted the project I was working with and no longer sells me the option to add the VR Camera. Any solution? Or do I have to delete it and install it again?

If you don't see the Aximmety on the menu bar, then it is likely you opened the original Unreal and not Unreal Editor for Aximmetry.
When opening Unreal Editor for Aximmetry, you should make sure it writes Unreal Editor for Aximmetry:
