I skipped a couple of recent versions and just upgraded to 2023.2.2. I can see a Low Latency mode toggle on the environments node. I can't find any reference to this in the documentation. Can I find out what this affects and how it works?

There is no documentation about Low Latency Mode yet.
In short, turning on Low Latency Mode gains about 1 frame less delay, while increasing a little bit the CPU load in your hardware. So after turning it on, you might be able to decrease the In-to-out Latency by one frame.
